Lemon Breeze Apple Pancakes

Lemon Breeze Apple Pancakes are light and fluffy oatmeal pancakes with shredded bits of apple and a kiss of lemon.

The sprinkle of lemon zest in these pancakes transforms the shredded apple into a spring-time delight, which is the perfect compliment to any combination of fresh berries that are in season.   That being said though, don’t be fooled into thinking these are only a spring treat.  The truth is these pancakes pair beautifully with my Sauteed Apples or apple butter for a cozy fall/winter brunch.  They are equally delicious with just a pat of butter and some maple syrup, any time of year.

The inspiration for these pancakes comes from a recipe by King Arthur Flour.  My family immediately fell in love with these gems, deeming them one of their favorite pancakes.  However, their point exchange made it difficult for me to keep them in my repertoire of recipes.  I began my quest to find a way of making them with a lower point value.  Ultimately, I found the perfect balance to keep them light and fluffy, but also calorie conscious.

Pancakes or Waffles

In addition to making delicious hot cakes, this batter offers versatility as it performs well as a waffle batter.  For the waffles, I used a round 7-inch diameter waffle iron and it performed beautifully without any additions or changes to the batter.

Weight Watcher and Waist Watcher

These delicious pancakes have a WW Smart Point value of 2 points per pancake.                        When using a 7-inch waffle iron, I was still able to produce 12 quarters (3 round waffles).  Therefore, the points value would remain the same.  One quarter of a 7-inch waffle is 2 WW Smart Points and a half of a 7-inch round waffle is 4 WW Smart Points.

Additionally, I would also like to note that this batter has no added sugar except for what occurs naturally in the apple, a favorable choice for someone on a sugar restricted diet.

Ingredients

Units Scale
  • 3/4 Cup Old-Fashioned Rolled Oats
  • 1 1/4 cups Buttermilk
  • 1 1/2 cups Tart Apple (Pink Lady or Honey Crisp), peeled and grated
  • Zest of 1 Lemon, grated
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 cup All-Purpose Flour
  • 10 scrapes Fresh Nutmeg or 1/4 teaspoon ground
  • 1 Large Egg, beaten
  • 1 Tablespoons Butter, melted

Instructions

  1. Place the oats in a mixing bowl and pour the buttermilk over them.  Let the oats soak while you peel and grate the apple and zest the lemon. 
  2. Preheat griddle over medium-low heat.
  3. In a small bowl, whisk together the salt, baking soda, baking powder, and flour; and set aside.
  4. Add the egg, butter, apple, lemon zest, and the nutmeg to the oat mixture beating to combine.  Stir in the dry ingredients until evenly moistened. 
  5. Measure batter by the 1/4-cupful onto a preheated, lightly greased griddle.   The batter is very thick and will not spread.  Gently spread the batter out to about 1/2 inch thickness and 4 inch diameter. 
  6. Cook until bubbles appear on top of pancakes and begin to pop.  Flip and cook on other side for about an additional 3-4 minutes, until golden brown.   
  7. Remove from griddle and serve.

These are also delicious served with sautéed apples and apple butter!  Yummy!

Notes

Serve with any combination of your favorite fresh berries and maple syrup, sauteed apples, apple butter.           This batter also performs well as a waffle batter.  I use 1 cup of batter for each 7-inch waffle.

Each pancake is 2 WW Smart Points.  Additional points for butter or syrup.                                                          For waffles:  a quarter of a 7-inch round waffle is 2 WW Smart Points, or 4 points for a half of a round.
