Lemon Breeze Apple Pancakes are light and fluffy oatmeal pancakes with shredded bits of apple and a kiss of lemon.  Serve them with berries or sauteed apples.

Ingredients

  • 3/4 Cup Old-Fashioned Rolled Oats
  • 1 1/4 cups Buttermilk
  • 1 1/2 cups Tart Apple (Pink Lady or Honey Crisp), peeled and grated
  • Zest of 1 Lemon, grated
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 cup All-Purpose Flour
  • 10 scrapes Fresh Nutmeg or 1/4 teaspoon ground
  • 1 Large Egg, beaten
  • 1 Tablespoons Butter, melted

Instructions

  1. Place the oats in a mixing bowl and pour the buttermilk over them.  Let the oats soak while you peel and grate the apple and zest the lemon. 
  2. Preheat griddle over medium-low heat.
  3. In a small bowl, whisk together the salt, baking soda, baking powder, and flour; and set aside.
  4. Add the egg, butter, apple, lemon zest, and the nutmeg to the oat mixture beating to combine.  Stir in the dry ingredients until evenly moistened. 
  5. Measure batter by the 1/4-cupful onto a preheated, lightly greased griddle.   The batter is very thick and will not spread.  Gently spread the batter out to about 1/2 inch thickness and 4 inch diameter. 
  6. Cook until bubbles appear on top of pancakes and begin to pop.  Flip and cook on other side for about an additional 3-4 minutes, until golden brown.   
  7. Remove from griddle and serve.

These are also delicious served with sautéed apples and apple butter!  Yummy!

Notes

Serve with any combination of your favorite fresh berries and maple syrup, sauteed apples, apple butter.           This batter also performs well as a waffle batter.  I use 1 cup of batter for each 7-inch waffle.

Each pancake is 2 WW Smart Points.  Additional points for butter or syrup.                                                          For waffles:  a quarter of a 7-inch round waffle is 2 WW Smart Points, or 4 points for a half of a round.
