The Apples

Don’t be afraid to try different combinations of apples.  Mix it up and try new combinations.  My preference is to pair tart apples like Pink Lady, Pacific Rose or Honey Crisp with a few sweeter apples like Envy,  Ambrosia or Galas.  The key is to mix a sweet apple in with the tart.  I usually stick to 3 tart apples and 2 sweet ones. For information on how to pick out apples, check out this blog from Cuts and Crumbles.

Simple tips for cutting apples

After peeling the apples, I have found using an apple coring tool helps to simplify the task of producing uniformly sliced pieces. Not only does this tool eliminate the need to core the apples with a knife, but it creates uniform wedges. This enables me to slice the wedges into consistent pieces therefore allowing the apples to cook evenly. I have found this tool to be a real time saver:

The Spices

If you have both Apple Pie Spice and Cinnamon, use as outlined in recipe. If only cinnamon is on hand, it isn’t necessary to purchase the apple pie spice.  Simply replace the Apple Pie Spice with an extra teaspoon of cinnamon.

  • Method: Stove top
  • Cuisine: American

Ingredients

Scale

For Apples:

  • 6 Cups (About 5 Apples, peeled, cut into quarters and sliced)
  • 2 teaspoon Olive Oil
  • 1 teaspoon Kosher Salt
  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Apple Pie Spice*
  • 1/2 teaspoon Cinnamon

Instructions

Heat a large skillet over medium low heat. Heat the olive oil in the pan until it begins to shimmer. Then add the apples, sprinkle with the salt and toss quickly.  Cover and let the apples cook for about 2-3 minutes.  Remove the cover and add the brown sugar and spices.  Mix throughly and replace the cover.

Continue to cook the apples for another 5-8 minutes.  Until they reach a nice golden color, and begin to soften, yet still hold their shape.  If you prefer a softer, creamier apple more like an apple sauce, reduce the heat to simmer and continue to cook until they reach your desired consistency.  It may be necessary to add a tablespoon or two of water, to keep them from burning.

Remove from heat and serve.  Enjoy them as they are for dessert. Equally, they are delicious served over oatmeal, cream of wheat, and ice cream.   However, one of my favorite uses for these apples are to serve them with pancakes or layered in my Cinnamon Apple Strata.

Notes

*About the spices:  If you have Apple Pie Spice and Cinnamon, use 1 teaspoon of Apple Pie Spice with a 1/2 teaspoon of Cinnamon.   If you only have cinnamon, the apple pie spice can be replaced with an additional teaspoon of cinnamon..
