Roasting Garlic offers up sweet caramelized notes of mellow, savory flavor.  These tender morsels are a delicious compliment to most any recipe.  Try it in the Sopa Seca de Fideo or Pasta di Fagioli.

Ingredients

Scale
  • 3 Heads of Fresh Garlic
  • Fresh Thyme Sprigs
  • Rosemary Sprigs
  • Sprigs of your favorite fresh herbs
  • 1/2 teaspoon Olive Oil
  • Kosher Salt
  • Fresh Ground Black Pepper

Instructions

  1. Preheat ove to 400 degrees F.
  2. Cut 1/4 to 1/2 inch off the top of each garlic head.
  3. Cluster garlic heads in a small baking dish.
  4. Sprinkle about 1/4 teaspoon kosher salt over each head.
  5. Sprinkle with freshly ground pepper.
  6. Drizzle 1/2 teaspoon olive oil over all three heads.
  7. Place Fresh Herb Sprigs over the garlic.
  8. Cover tightly with aluminum foil.
  9. Bake at 400 degrees for 25 minutes, then reduce heat to 300 degrees.
  10. Continue to bake for another 30 minutes or until garlic is soft and golden, when pierced with a knife.
  11. Remove from oven, uncover and let cool.
  12. Store in an air tight container in the refrigerator.
