Roasted Garlic

Follow these simple steps to make delicious caramelized heads of garlic. These caramelized cloves will simplify cooking while adding delicious flavor to all your recipes.

Garlic become sweet and flavorful when roasted.

Roasting Garlic is both easy to make and a flavorful addition to many recipes.  Roasting brings out the sweet caramel notes in garlic and removes any harsh bitterness.

Additionally, roasting garlic makes cooking a bit easier for me.  Rather than spending time peeling and mincing garlic for a recipe, I reach into my jar and take what is needed.  I mash it and add it to my recipe as it is cooking.  It just melts into the dish bringing forward a burst of mellow garlic flavor.

Generally,  I prefer to roast 3-4 heads of garlic at a time, as it will store for several weeks refrigerated in an air tight container.

Try adding these tender garlic morsels to any of your favorite recipes that call for minced raw garlic . Not only will you notice the milder and sweeter flavor, you will be pleased how much easier it is to use. I often use these caramelized cloves in recipes like Sopa Seca de Fideo, Tuscan Bean Soup and Pasta Puttanesca.

Additionally, these roasted morsels are deliciously fantastic in homemade dressings. Many recipes for salad dressings call for raw garlic. Often times, these dressings have a very strong and pungent flavor. This can be rectified by replacing raw cloves with roasted cloves. Simply replace measure for measure. If a recipe calls for one teaspoon of raw minced garlic, replace with one teaspoon of roasted garlic.

Choosing Fresh Garlic

When shopping for fresh garlic, try to avoid garlic that is sprouting. This is a sign of old garlic. Then only time you want to purchase sprouted garlic, is when you are planning to plant it in your garden. For additional tips on how to choose and store fresh garlic, check out Cuts and Crumbles.

Roasting Garlic offers up sweet caramelized notes of mellow, savory flavor.  These tender morsels are a delicious compliment to most any recipe.  Try it in the Sopa Seca de Fideo or Pasta di Fagioli.

Ingredients

  • 3 Heads of Fresh Garlic
  • Fresh Thyme Sprigs
  • Rosemary Sprigs
  • Sprigs of your favorite fresh herbs
  • 1/2 teaspoon Olive Oil
  • Kosher Salt
  • Fresh Ground Black Pepper

Instructions

  1. Preheat ove to 400 degrees F.
  2. Cut 1/4 to 1/2 inch off the top of each garlic head.
  3. Cluster garlic heads in a small baking dish.
  4. Sprinkle about 1/4 teaspoon kosher salt over each head.
  5. Sprinkle with freshly ground pepper.
  6. Drizzle 1/2 teaspoon olive oil over all three heads.
  7. Place Fresh Herb Sprigs over the garlic.
  8. Cover tightly with aluminum foil.
  9. Bake at 400 degrees for 25 minutes, then reduce heat to 300 degrees.
  10. Continue to bake for another 30 minutes or until garlic is soft and golden, when pierced with a knife.
  11. Remove from oven, uncover and let cool.
  12. Store in an air tight container in the refrigerator.
