Grilled Peaches

Peaches dressed and grilled make wonderful sugar-free toppings on ice cream, oatmeal, appetizers and quinoa bowls.

Ingredients

  • 2 Peaches, halved and pitted
  • 2 drops of olive per peach halve
  • Pinch of Kosher Salt

Instructions

  1. Pre-heat Grill, to medium-high heat.
  2. Place 1-2 drops of olive oil on each peach halve and rub two halves together.
  3. Sprinkle lightly with a pinch of kosher salt.
  4. Place peach on grill cut-side down.
  5. Grill for 3-4 minutes.
  6. Rotate 90 degrees, still cut side down and continue cooking for about 4 additional minutes.  You will find it is easier to rotate the peaches using a metal spatula.  A metal fish turner will work well for this, if you have one.
  7. Remove from grill and place on a dish to cool before serving.
  8. Store cooled peaches for later use in air-tight container in the refrigerator for three-four days.  Because the peaches do not have any added sugar, the shelf-life will be considerably short.
