Creamy Dijon Sauce

This Creamy Dijon Sauce is the perfect accompaniment to dishes like savory bread puddings, crepes or my recipe for Ham and Gruyere Baked French Toast. Furthermore, this sauce is quick and easy requiring only 5 simple ingredients.

Big Flavor but lighter in calories…

Although this sauce is a lighter version than most sauces, it delivers big flavor without being overwhelming. The sauce acquires it flavor from dijon mustard, dispatched in a lighter style cream sauce.

And while the sauce is not heavy, it has a rich and creamy finish. Furthermore, this sauce will easily accompany a variety of entrees without overpowering.

My family loves this sauce served with my recipe for Ham and Gruyere Baked French Toast. Another family favorite is to serve over savory crepes. But let’s not forget that it may also be used to make a fancy egg dish or bump up a simple dish like grilled or sauteed chicken.

Ingredients

FOR THE SAUCE:

  • 2 Tablespoons Butter
  • 2 Tablespoons All-Purpose Flour
  • 1/2 cup Chicken Broth
  • 1/2 cup Whole Milk
  • 2 Tablespoons Dijon Mustard
  • 1/4 teaspoon Kosher Salt PLUS
  • 1/8 teaspoon Kosher Salt
  • 1/8 teaspoon Ground White or Black Pepper
  • Chopped Fresh Chives for Garnish (Optional)

Instructions

  1. Over medium heat, melt the butter in a small saute or sauce pan.
  2. Whisk in flour and cook for about 1 minute.
  3. Reduce the heat to low, and gradually whisk in the milk.  The mixture will become very thick. 
  4. Continue cooking over low heat and slowly whisk in the broth.
  5. Once the mixture is combined and smooth, raise the heat source to medium-low and bring up to a low boil.
  6. As soon as the first signs of bubbles appear, reduce the heat back down to low and simmer the sauce for 3 minutes, while whisking.  
  7. Whisk in the mustard, salt and pepper and simmer just until heated through, about 1 minute.
  8. If the sauce becomes too thick, you can add a tablespoon of broth one tablespoon at a time in order to thin until desired thickness is acquired.
