Easy and Delicious!

This appetizer is so easy to make and will be ready to serve in just minutes. First of all, Grilled Peaches can be made in advance and refrigerated until ready to use. However, these peaches are also easy to prepare on the fly! As the peaches grill up in less than ten minutes, all that is left is to chop and serve them over the burrata cheese. If you are in a pinch and can’t get burrata, try serving over a log of goat cheese.

When a peach is grilled, its flavor is heightened by caramelizing its natural sugar, and they add crazy delicious flavor to savory foods like creamy burrata cheese for a show stopping appetizer dish. Once the peaches are grilled, there really is very little left to do. Simply dress the burrata and peaches with a drizzle of honey and a sprinkling of salt. And while it is optional, a light garnish of sage or basil chiffonade makes this dish pop with additional flavor.

Burrata…cheese stuffed with cheese.

If you are unfamiliar with burrata, you are missing a special treat. Soft mozzarella shaped into a pouch makes up the outer shell. Additionally, the center is comprised of soft cheese with a creamy butter-like texture. When the burrata is cut, the soft creamy center will gently ooze out. This creamy center is a mixture of cream and soft stringy cheese curds called “stracciatella”.

Burrata cheese is available from a number of cheese companies. Some of the more popular brands are BelGioioso, Angelo and Franco and di Stefano. This recipe was based on a 4 ounce burrata made by BelGioioso. You will want to look for a Burrata that is plain. By this I mean unflavored. Some burrata are flavored with Black Truffle, so watch your labels. I would recommend to steer clear of these. Burrata is available at most grocery markets and wholesale retailers like Costco.

To Chiffonade or not…that is the question.

Chiffonade is a simple cutting technique. For easy to follow steps and pictures check out this post on How to Chiffonade Basil. Generally, chiffonade is used to cut leafy herbs into long ribbons. This is accomplished by stacking leaves. Next, they are rolled tightly like a cigar. Finally, by slicing the leaves perpendicular to the roll, long ribbons are created. This cut transforms herbs like basil and sage into light and pretty shreds. Further allowing you to add additional flavor to any dish without becoming overwhelming.

If time is of the essence, simple tear the basil into little shreds and sprinkle over the dish. Either fresh basil or fresh sage accompany this dish nicely. Each brings a slightly different flavor profile. However, both are equally delicious. If fresh basil or sage is not on-hand, no worries. Just proceed without. Finish off the dish with a sprinkling of salt and a drizzle of honey. This lovely dish is ready to serve.
