A tomato stuffed with a simple mixture of fresh bread crumbs, herbs and cheese are the perfect side to pair with any meal from grilled meats, baked pasta or even eggs.

Ingredients

Units Scale
  • 6 Medium-sized Tomatoes, washed
  • 45 grams (1.5 ounces) Fresh Bread Crumbs
  • 28 grams (1 ounce ) Gruyere, cut into small pieces
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Fresh Thyme, minced or
  • 1/2 teaspoon Fresh Oregano, minced
  • 1 teaspoon Fresh Parsley, minced
  • 1/2 teaspoon Kosher Salt
  • 3 teaspoons of Olive Oil (Divided equally for each tomato half.)
  • Additional Salt and Pepper for tomato halves

Instructions

  1. Preheat oven to 350 degrees.
  2. Remove the core of each tomato, without cutting through the whole tomato. 
  3.  Slice each tomato in half and place cut-side facing up in baking dish.  
  4. Sprinkle each half with a pinch of salt and pepper.
  5. In a small bowl combine the breadcrumbs, cheese, parsley, thyme or oregano, salt and black pepper.
  6. Spoon 1 tablespoon of the the breadcrumb mixture onto each tomato half.
  7. Drizzle each tomato half with 1/4 teaspoon of olive oil.
  8. Cover baking dish with foil.
  9. Bake for 20-25 minutes just until the tomatoes are beginning to soften.
  10. Remove pan from oven and remove foil covering.  Turn oven up to broil.
  11. Broil 8-10 minutes to brown the tops, but keep a watchful eye as to not over cook or burn tops.
  12. Serve warm with entree or at room temperature.   

Notes

Don’t be afraid to alter this recipe to your tastes and likes.  Try using different types of cheeses or different combinations of herbs.  If you only need a few tomatoes, don’t worry.  This stuffing freezes nicely and is ready to go the next time you need.
