Green Mediterranean Salad

This Green Mediterranean Salad get its lively and fresh flavor from the dressing.

The Dressing

The dressing that makes this salad pop is Lemon-Sumac Dressing. A light dressing made from fresh lemon juice and ground Sumac berries. Sumac berries grow throughout the Middle East and Sicily. The sumac berry has a tart lemon flavor, yet it is not sour, adding a lively, bright citrus zing.

Choose your option…avocado or feta.

Avocado is a featured ingredient in this dish. The addition of this ingredient brings a level of creaminess to the salad. However, avocados are not always available. Additionally, it seems like they are never ripe when you want to use one. In this case, I would turn to feta cheese as an option. Feta cheese brings equal creamy texture to the salad, and compliments the lemon dressing nicely. If you choose to replace the avocado with the feta cheese, use 1 ounce of feta, or 1/2 ounce per person.

Ingredients

FOR SALAD: 

  • 4 cups Romaine, torn or cut
  • 2 cups Red Leaf Lettuce, torn or cut
  • 2 cups Arugula
  • 1/2 cup Chopped Tomatoes
  • 1/3 cup Celery, sliced
  • 33 grams Avocado, diced OR
  • 1 ounce Feta Cheese
  • 1/2 cup Garbanzo Beans, drained and rinsed

FOR LEMON-SUMAC DRESSING:

  • 2 Tablespoons Fresh Lemon Juice
  • 2 teaspoons Olive Oil
  • 1 teaspoon Honey
  • 1/8 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Sumac
  • 1/2 teaspoon Kosher Salt
  • 1/8 teaspoon Black Pepper

Instructions

  1. In a small jar, mix together all the dressing ingredients.  Put lid on jar and shake to combine.  Store in the refrigerator.
  2. Dress Garbanzo Beans with 2 teaspoons of Lemon-Sumac Dressing. Let marinade for at least 15-20 minutes, tossing occasionally to redistribute the dressing.
  3. Dress avocado with 1/2 teaspoon of Lemon-Sumac Dressing and a pinch of salt.  Mix to combine.
  4. Place remaining salad ingredients into a large salad bowl and toss to combine.  Reserving the marinated avocado and garbanzo beans until ready to serve.  
  5. Just before serving, remove the garbanzo beans from the dressing and set them aside.  To the marinade add an additional 1 1/2 teaspoons of dressing.  Pour dressing over salad and toss to combine.   
  6. Divide salad among two plates.
  7. Top each portion with 1/4 cup of garbanzo beans and 1/2 of the avocado mixture (about 1 Tablespoon).

Notes

  • The dressing makes 8 teaspoons.
  • Two teaspoons are used to marinate the garbanzo beans. 
  • A 1/2 teaspoon is used to dress the avocado.
  • And additional 1 1/2 teaspoons is used to toss with the salad, just before serving.
  • Four teaspoons will be left over for another use.
  • Two teaspoons of dressing is 1 WW Smart Point.
