Fried Rice with Cauliflower and without Guilt

My recipe for Fried Rice with Cauliflower is a makeover of a fried rice that I have made for years.  While testing this recipe, I came across Organic Cauliflower Rice at Trader Joe’s.  I have heard quite a bit of buzz talk about this product and how much it tastes like rice.  Truth be told, I am not a big fan of cauliflower, but my curiosity had peaked.    My family loves cauliflower,  so, I was willing to venture out of the box.  This product was an eye-opener for me and I was amazed at how delicious it was.  I have to say, cauliflower rice won me over!

Fried Rice with Cauliflower

White Rice

Many recipes using cauliflower rice, replace the white rice completely.  But, I prefer it with a little bit of white rice added. I feel that not only does it add texture; but it also satisfies my hunger for a longer period.  However, if you would prefer you can omit the white rice.  The omission of the rice will reduce the Weight Watcher point count down to 1 point per serving.  As for the rice itself, this recipe works best with leftover rice.  However, a small batch of rice could be prepared early in the morning or the day before.

The Peas and Vegetables

My preference for this dish is the use of sugar snap peas.  I chose these peas as they added crunch and texture.  However, any pea can be used as a replacement, snow peas, sweet fresh peas, or frozen peas.

The Bacon

I like to sprinkle one slice of crisply cooked bacon, minced into bacon bits, over the finished dish.  The addition of the bacon just adds a little extra crunchy flavor and color.  However,  this recipe can easily be prepared vegetarian and the bacon omitted.

Weight Watchers and Waist Watchers

If my recipe for Fried Rice with Cauliflower is made with the white rice a 3/4 cup serving is 2 WW Smart Points.  But if you choose to omit the white rice, a 3/4 serving is 1 WW Smart Point.  The omission of the bacon does not affect the point count.

Ingredients

Units Scale
  • 3 teaspoons Olive Oil
  • 1 1/2 cups of Diced Carrot, (about 3 large)
  • 3/4 cup Diced Celery, (about 2 large stalks)
  • 4 scallions, thinly sliced
  • 3 cups Cauliflower Rice, frozen or fresh
  • 1 cup White Rice, cooked
  • 1 cup of Sugar Snap Peas, cut in 1/2 or 1/3rds or peas of your choice
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Oyster Sauce
  • 1 teaspoon Worcestershire Sauce
  • 1/4 teaspoon Cayenne
  • 1 Slice of Bacon, cooked and minced (optional)

Instructions

  1. Finely dice carrot and celery, and set aside.  Thinly slice the scallions and set aside.  Clean strings from sugar snap peas and cut into bite size pieces, either in half or thirds, depending on their size.
  2. In a small dish or cup, combine together the soy sauce, oyster sauce, Worcestershire sauce and cayenne* and set aside.  *Note:  The cayenne adds a pinch of heat.  If you are serving to young children, you may want to omit the cayenne pepper.   
  3. Heat a large nonstick skillet over medium heat.  Place oil in pan, and just as it begins to shimmer, add the carrots and celery and stir occasionally.  Cook until carrots just begin to get tender, about 7-8 minutes. 
  4. Add the scallions and snap peas and continue to cook until the scallions begin to soften, about 3-4 minutes. 
  5. Stir in the cauliflower rice and white rice.   Mix to combine with all of the vegetables. 
  6. Add the sauce mixture and continue to stir, mixing well.
  7. Continue to cook until mixture is throughly heated and cauliflower is cooked but still crunchy, about another 5 minutes. 
  8. Remove from heat, sprinkle with bacon and serve.    

Notes

*The white rice in this recipe is best if made a day or two ahead.  Actually, leftover rice works really well. 

For the Bacon:  If I am using, I like to incorporate a leftover piece from breakfast.  Cut crosswise into slices and then mince into small pieces.  

Weight Watchers

A 3/4 cup serving made with white rice is 2 WW Smart Points.  A 3/4 cup serving made without white rice is 1 WW Smart Point.
