The Dressing

The dressing that makes this salad pop is Lemon-Sumac Dressing. A light dressing made from fresh lemon juice and ground Sumac berries. Sumac berries grow throughout the Middle East and Sicily. The sumac berry has a tart lemon flavor, yet it is not sour, adding a lively, bright citrus zing.

Avocado is a featured ingredient in this dish. The addition of this ingredient brings a level of creaminess to the salad. However, avocados are not always available.
