My recipe for Tuna Salad with Greek Dressing takes an old classic and gives it a new twist on flavor. This bright salad is a mix of tuna, bulgar, celery, artichoke and my Creamy Greek Dressing.

Tuna, Salmon or Chicken…Make it your own
This recipe is so versatile and easy to make your own. Simply substitute the tuna for canned salmon or any left over fish. Perhaps you are not a fish fan, then substitute with chopped chicken breast.
The Bulgar
Bulgar is a great way to help extend your protein. Not only does it offer great nutrients and fiber for a healthy diet, it also provides a good source of plant based protein. It is simple to prepare. Simply place 2 parts of broth or water to 1 part of bulgar grain and 1/2 teaspoon salt in a 3-4 quart pan. Bring to a boil, reduce to a simmer and cover. Let cook covered over low heat for about 15 minutes. The bulgar is cooked when it is softened. If there is left over liquid in the pan, simply drain it off. Fluff cooked bulgar with a fork and refrigerate in a sealable container.
The Artichokes
I just love the sweet taste of artichoke hearts and this is a great way to impart their flavor in a dish. However, I know that some of you don’t like artichoke hearts. No problem… simply omit them.
Tuna Salad with Greek Dressing…Serving Options
Here are a few other options for serving your salad. It’s great served top of on bed of lettuce garnished with chopped tomatoes and or avocado. But you can also stuff the salad into a tomato. Either scoop out part of the center of the tomato and fill it with your salad or core a tomato, and slice wedges from top to bottom, leaving a portion of the bottom intact. The wedges can be pushed open to make a tomato blossom.

Then stuff the center with your finished salad.
Also, for a quick on the go salad to take to work, I place my salad in a container and top it with chopped tomatoes. It’s ready to eat whenever time allows.
Weight Watchers and Waist Watchers
This recipe makes one serving (about 1 1/4 cups). Multiply the ingredients by the number of servings you wish to make. If you are following the Weight Watcher Freestyle Plan, one serving is 3 WW Smart Points. However if you are following the Simply Filling Plan, one serving is 1 WW Smart Point.
